Inside The Kitchen: Pasta Fagioli (But I Cheated)
I am not a soup person. I want to become that person who can whip up stews and hearty soups with the blink of an eye, but I’m just not. However, I still enjoy EATING them and I want my children to grow up loving soup just as much as I do.
Instead of never making soup at home, I decided to give up and purchase one of those pre-measured bags that you basically throw into stock with a few veggies and see how it turned out. I opted for Bean Cuisine.
It ended up tasting great! Ok, so it wasn’t as good as when my grandmother used to make it… but I’ll take what I can get on those busy nights when I don’t have time to leaf through a cookbook and whip up something spectacular.
- 2 tbsp. olive oil
- 1 1/2 cups onions, chopped
- 1 1/2 cups carrots, chopped
- 1 1/2 cups celery, chopped ** I didn’t have any in the house yesterday when I made this.
- 3 tsp. garlic, minced (6 cloves)
- 3 cups water
- 1 14.5 oz cans beef broth
- 1 tsp. salt
- 1 14oz can diced tomatoes
- Grated Parmesan cheese
Step 1: Heat oil and combine carrots, celery, onions and garlic. NOTE: I had no celery and it was too late to run out and get some. ;(
Step 2: Add everything but the pasta (that comes in the packet) and the cheese. The packet contains a variety of beans, peas, red bell peppers, spinach, spices and celery. Cook on low for 2.5 to 3 hours. Stirring often.
The packet tells you when to add the pasta – it’s towards the tail end. Then serve and top with grated cheese.
(Not bad for something that came out of a bag right?)
Enjoy! The point of this post was to show you that those bags can result in a pretty good meal. Don’t shy away from them on nights when you need a little help in the kitchen. We all can’t be culinary geniuses every day of the week.
Bean Cuisine is a inexpensive way to serve a healthy meal to the kids. I did a quick search online and found it’s available in a few major supermarkets or Amazon.
