This question haunts me…every single day! We rarely eat take-out so I cook almost every day. If we do eat out, it’s usually on the weekends. I try to plan out my weeknight meals so I don’t stress too much and to cut out last minute runs to the grocery store every! I have a few recipes that are my stand-by’s, but I LOVE to try new recipes. I’ve talked to some people that are afraid to try new recipes because they are too hard, too time consuming, but with a little planning and just simply reading directions, trying something new is easy!

Jennifer Chandler makes it a little easier for us too! She created an awesome cookbook called “Simply Suppers.” In the cookbook, you will learn recipes on how to make easy, delicious weeknight meals or weekend feasts fit for company!  I love that in the intro she has an entire section called “10 Leftover Chicken Makeovers and 20 Freezer Go-To’s”  She recommends that when you make any of the “20 Freezer Go-To” Meals you make a double batch, that way you always have a home cooked meal waiting in your freezer!  You will find recipes for everything you need to make a delicious, home-cooked meal in “Simply Suppers”. From Soups, Meats, Poulty, Seafood, Vegetables, Pasta, Melty Sandwiches to Desserts and more. Yum! I’m getting hungry just writing this!

I thought I would step out of my box and try something completely new from this cookbook so I made “Sauteed Spaghetti Squash.” It is Fall after all and I’ve never cooked spaghetti squash. The recipe was so easy and it turned out delicious! It was a great side dish! I cooked the squash in the oven first, but there is a “time-saving tip” on the page that gives me directions on how to cook the squash in the microwave! I love that she gave me options!
