Inside The Kitchen: Greek Frittata Bites

I actually COOKED LAST NIGHT! Holy Smokes – what a miracle. 🙂 I found this amazing recipe online for Greek frittata bites and thought that I’d give it a shot.  Full list of ingredients here. Here’s a quick recap of what you need to do. Believe me… this frittata recipe is completely manageable and perfect for morning leftovers.

Recipe: Greek Frittata Bites

First things first – Preheat oven to 350F.

Fresh spinach, tomatoes, bell peppers. OH MY! Brown the onions, wilt the spinach and then remove from heat.

Now it’s time for the egg mixture. I won’t post the recipe in completion because I can’t take really credit for it. Be sure to visit the original blog post to print directions. Basically, you combine the spinach mixture, feta cheese, and add a TON OF EGGS.


Spoon into muffin tin. Do not fill the cups more than ¾ of the way to avoid spillage. Cook for 25 minutes. If you don’t have two muffin tins, pour the rest into a cake pan and cook.

And enjoy!!! These bite sized treats were delicious and healthy. My husband ate more of them than he’d want me to admit online. 🙂 Nice appetizer as well.
