The best thing about these oatmeal chocolate chip bars is they take around 30 minutes to make, and are so much faster to make than individual cookies. Think about it – with cookies, you have to mold each cookie and then place them on a pan. Sometimes I have to cook two sets of pans because I can’t fit the entire batch in my oven at once!

With oatmeal chocolate chip bars, everything goes in at ONCE! BAM! I just love that.

For this chocolate chip cookie bar, I decided to have a little fun. Instead of using traditional chocolate chips – which I ALWAYS DO – I opted for chocolate covered cranberries. When cooking, the chocolate around the cranberries melts and the cranberries remain making it such a delectable treat to find!

You can opt to stick to the traditional chocolate chips, or you can switch out to the chocolate covered cranberries – that will be up to you. I just wanted to give you an option!

II also decided to swap traditional milk with Planet Oat Oatmilk because I am lactose sensitive. I’m not intolerant, just sensitive. In fact, I headed to the doctor just last month to officially find out if I had a full-blown allergy, and thankfully I do NOT.

How To Make Oatmeal Chocolate Chip Bars

You only need a few ingredients to make these oatmeal chocolate chip bars, most of which are typical baker’s staples.

  • 1/2 cup butter
  • 1/4 cup Planet Oat Original Oatmilk
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 3/4 cups flour
  • 2 cups quick oats
  • 2 cups chocolate-covered cranberries or chocolate chips
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Preheat your oven – 350 degrees and lightly grease a 9×13 inch pan with cooking spray or butter.

In a large mixing bowl combine all ingredients together except the chocolate chips / chocolate covered cranberries. Beat together until combined.

Once thoroughly combined, toss in the chocolate chips / chocolate covered cranberries and manually mix with a spoon. Make sure everything is evenly spread throughout.

Spread the mixture into your prepared pan. If you’d like, you can sprinkle a few additional chips on the top of your oatmeal chocolate chip bars so visually it will bake front and center for a great presentation.

Bake for 30 minutes or until golden brown. Allow to cool completely before cooling.

Can you substitute regular chocolate chips for mini chocolate chips?

If you don’t want to use the chocolate covered cranberries or regular chocolate chips, you can absolutely substitute in mini chocolate chips into this recipe. Go right ahead!

If your oatmeal chocolate chip cookie bars are dry then that means that you overbaked them! Yikes! Did you use the right-sized pan? That matters too.
