black bean salad recipe

1 can of black beans (rinsed and drained)

3/4 cup pico de gallo (you could make your own if you’d like but I really love Trader Joe’s version)

3/4 cup diced peppers – use orange and yellow if you can find them

1.5 tablespoons of Caesar dressing

3 tablespoons of finely diced cilantro

A squeeze of lemon (teaspoon if you want to get specific)

In a large bowl (not the one you are using to serve in), mix everything.

Serve immediately and enjoy.

black bean saladWant to add olives – go right ahead! My husband isn’t a fan but they would be great. Also consider a can of corn too! I love making this Black Bean Salad appetizer because it is SO EASY TO DO. Just make sure to have pita chips on hand for unexpected guests.

I’m a huge fan of mixing fresh ingredients with whatever I have on hand in my pantry. Canned beans are a HUGE staple in my household. What are your favorite recipes to make with canned beans?
